KimChi

Our KimChi is a blend of many traditions, some old and some new.  The root of our recipe is Korean, which we first experienced on a farm in California, then added our own Indiana twist with locally-sourced ingredients, and we make it in traditional German-crafted ceramic crocks.​  Because this KimChi is actively fermenting,

it is rich in probiotics which have been linked to many positive health benefits.

Ingredients: Cabbage, Daikon Radish, Carrot, Vegetable Broth (Water, Potato, Dark Leafy Greens, Garlic), Onion, Apple, Peppers, Garlic, Ginger, Pink Himalayan Salt

 

Salsa

Closer to the flavor of a fresh salsa than a canned one,​ our Salsa is fermented in traditional ceramic crocks. We then cool it to slow the fermentation and preserve that fresh flavor with a tart kick.

A whole new world of flavor opens up when you top your food with Freshly Fermented Salsa.  Try it on your tacos, your breakfast plate, or make some Avocado Toast and top it off with your favorite flavor of Liquid Peppers.

Ingredients: Tomatoes, Onions, Peppers, Pink Himalayan Salt, Garlic, Herbs

 

Sauerkraut

We hand make each batch in traditional German Ceramic Crocks with nothing but Cabbage, Caraway Seeds, Salt, and Water.

We cut our cabbage by hand in wider pieces that offer a crisp and refreshing crunch as you enjoy our Sauerkraut.

Ingredients: Cabbage, RO Water, Pink Himalayan Salt, Caraway Seeds.

 

Green Beans

Pickled Green Beans.  

These beans are grown in-house, we preserve them in a salt brine with garlic and black pepper.  

These beans are bursting with flavor, a reminder of summer's bounty.

 

A delicious snack.  Loved by kids.  Probiotic.​

Ingredients: Beans, RO Water, Pink Himalayan Salt, Garlic, Black Pepper.

 

Pesto

Our Pesto is Unique.  Crafted in small batches with Basil grown in-house.  We make our Pesto with Nutritional Yeast and Sunflower Seeds to make it accessible to just about everyone.

It is preserved through lacto-fermentation, just like our other foods, which means it is probiotic and helps with digestion.  It is highly concentrated and very strong.  

Our favorite way to enjoy this Pesto is to stir in olive oil and serve over pasta or as a spread in a sandwich.

Ingredients: Basil, RO Water, Sunflower Seeds, Pink Himalayan Salt, Nutritional Yeast, Herbs

 

Liquid Peppers

We start with hot peppers that are grown in-house.  We process each pepper individually by hand before fermenting them in a salt brine.  The peppers are then blended down into a sauce after at least one month, while our RESERVE sauces are aged for at least 9 months.

The result is an ode to simplicity.  Fermentation slowly breaks down the sugars in the peppers and leaves a depth and complexity of flavor behind that is unmatched.

Fermented. Blended. Bottled.  That's it.

There's no cheese in this Cheesecake. 

There's no gluten, either, if you were wondering. 

So why did we call it cheesecake?

The filling has all the silky smooth decadence that comes from cashews.  The crust is a blend of dates for sweetness, sunflower seeds for texture, and walnuts for depth of flavor.

Rich, but not too sweet.  A decadent treat.
